Many people have dietary restrictions, which is why Paula Dempsey, owner of Dempsey Bakery, is passionate about providing delicious food that is free of all gluten, wheat, soy and nuts.
After discovering that her family had a genetic disorder that required a gluten-free diet, Dempsey was determined to create allergy-friendly breads, cakes, pies and more to serve her family as well as other families in Arkansas. Dempsey Bakery opened its brick-and-mortar store in 2011 and became one of 127 gluten-free bakeries across the country. The bakery also provides products for local restaurants and markets to serve.
“If you have a complicated diet and can just go to a local bakery with great food on the market, it is much easier to comply [with dietary restrictions] which helps your overall health,” Dempsey said. While it can be difficult to create and perfect gluten-free products that do not require nuts to enhance textures and flavors, Dempsey Bakery is committed to sourcing the necessary ingredients to provide everyone tasty food “that is fresh and readily available.”
It’s important to Dempsey that the bakery not just be a gluten-free bakery, but a great bakery in general. New products are tested and tweaked multiple times by staff to ensure customer satisfaction. “One thing is for sure — Little Rock will always have a safe place to eat!” she said.
